A quick check-in. The Belgian Dark Strong is actively fermenting in the PFB…airlock bubbles are almost constant. I’m hoping the chill-down time didn’t take too long yesterday and that no off flavors result. Until I can get a chiller, I need to keep extra ice ready on brew days. Two bags were NOT enough. But for now, we move forward with positive indications. Probably another 6-ish days in primary. There shouldn’t be too much to report between now and then. I know the air bubbles frequency will slow. If all goes as planned, that’s all that should happen.
BTW, I tried a couple of new beers today…a Hoppyum (Wow was that hoppy!) and a Double D IPA (pretty hoppy, but too bitter for my personal tastes).
